Charcoal vs. gas

This is a true built-in charcoal grill, not a gas grill with a smoke box. The charcoal pan raises and lowers on a crank handle, so you set heat by distance rather than with a valve, and the hood vents let you hold low temperatures for smoking. The front loading door lets you add fuel mid-cook without pulling the food off. If you want charcoal flavor in a permanent outdoor kitchen, this is built for it.
